Boiling and Freezing in One Experiment

In this demo, acetone in a water-acetone solution is made to boil off by creating a low enough pressure. Acetone that leaves the system carries so much energy with it that the water-rich solution actually freezes! Watch this cleverly designed experiment:

This demo is even better: bring the ambient pressure down so that water is brought to a boil; the energy used up in boiling off some of the water is large enough to cool the rest of the water down so much that it actually freezes. How cool is that?
